Finally my cupcake debut! Well my very own cupcake recipe debut. I came across the 2011 Ice Cream Cupcake Challenge online, and knew I HAD to join. Details about it can be found here and here.

Banana Split Cupcakes
makes 12
1 1/2 cups flour
1 3/4 teaspoons baking powder
1 cup sugar
3/4 cup butter
1/2 cup milk
1/8 teaspoon salt
2 teaspoons vanilla extract
3 large eggs
3 bananas
vanilla ice cream
ice cream toppings of your choice
Heat oven to 350 and line cupcake pan with liners.
Combine the butter and sugar and mix on low for 30 seconds. Raise speed to high and mix until light and fluffy.
In a different bowl whisk together flour, baking powder and salt. Set aside. In another bowl combine milk and vanilla.


Add egg yolks to the butter mixture one at a time until well blended. Next add the flour mixture to the butter mixture alternting with the milk. Mix until a smooth batter is formed.

In another bowl beat the egg whites until stiff peaks form. Then gently fold in egg whites into the cupcake batter in three batches.


Pour into liners about 3/4 full and bake for 15 min.

After cupcakes come out of the oven, place on cooling rack until completely cooled.

Once cooled cut 2 small slivers out of each cupcake. Also cut each banana into thirds, each third into half, and each of those halves into another half so it ends up like this:


Place the banana slices in the grooves you cut. Top with a few small ice cream scoops made from a melon-baller, and whatever toppings of your choice.

And voila!

I love the idea of using small, cut up banana slices on the cupcakes. It gives just the right amount of banana without being too much.
